Why do my business details need managing at all?

Because they already exist in places you did not put them. Directories and map services build profiles automatically from whatever they can find, and once those go stale they keep sending customers the wrong information until somebody corrects them. Most businesses discover this after a move, when calls stop arriving and the old number is still listed in a dozen places.

Does this replace a Google Business Profile?

No — it manages it alongside everything else. Your Google profile is usually the most important single listing, but it is one of many, and consistency across all of them is what stops the conflicting information.

What actually goes wrong if listings disagree?

Two things. Customers get sent to an old address or ring a number that no longer works, which is lost trade you never hear about. Does this replace having a website?
